National Pumpkin Day is held every October 26 and is a day to celebrate one of the most beloved and versatile gourds on earth and recognizing the favored autumn decoration and food.

Here's a recipe for our favorite pumpkin muffins. 

Healthy Pumpkin Oatmeal Muffins

Servings: 12 servings

1 cup oats

1 cup oat flour (add one cup of oats to bullet blender if you don't have oat flour on hand)

2 tsp baking powder

1/2 tsp sea salt

1 tsp cinnamon

2 tsp pumpkin pie spice

1/4 cup + 2 tbsp. xylitol

1 egg

1 cup almond milk

1/4 cup melted coconut oil

1/2 can pumpkin

1/2 chopped pecan (optional)

Mix all ingredients. 

Divide evenly between muffin cups. 

Bake at 450-degree oven for 20-25 minutes.
